Caroline THOMAS and Sébastien LAVAU, passionate farmer-cheese makers, directly transform the milk produced on the farm. Their leitmotif is to contribute to feeding the inhabitants of the territory by offering “healthy” and quality products.

Caroline and Sébastien left everything to come and settle in La Devise in February 2020. It was as the birth of their child approached that they wanted to commit to a project of territory, social ties and sharing through peasant agriculture, respectful of soils, plants, animals and people.

Thus, out of a taste for breeding and to be in accordance with their convictions, they chose to raise sheep and transform their milk into delicious cheese products. Their range is varied and diversifies over time. They offer for sale fresh cheeses, aged cheeses, tommes, but also yoghurts and fromage blanc. New this year, mutton tagines have completed their offer.

The La Houlette farm opens its doors regularly and organizes with the Comptoir Local visits during the April holidays.

This is an opportunity for Caroline and Sébastien to explain their extensive farming method, to visit their wooden sheepfold and their processing workshop. They present with passion their breeding carried out in organic farming which includes 120 ewes of the Lacaune breed. The latter take advantage of the fresh grass that grows on the 25 hectares of green pastures. These large, beautiful ewes are particularly well suited to range grazing and have excellent dairy abilities.

You can buy their products at the farm on Fridays from 18 to 19 p.m., but also at the “Bio Marché” in Aigrefeuille d'Aunis on Wednesdays from 30 to 16 p.m. and at the producer shop “À la Ferme d'Aunis” in Surgères.

From April 4th to May 15th you can also find the tajines of the farm in the Comptoir Local reception desks in Surgères and Marans.
